The thing with the seemingly-color black+white isn't an "illusion". The inverse gets burned into your retina enough that your eyes try and adjust for it. When the black and white image shows up, your eyes are adjusted to try and balance out the negative from earlier, but since that image isn't there to cancel out, you see color. The black and white image gives it the final touches to make it look just right.
