From what I can tell, flood "absorb" information from their hosts-- sometimes, they use this information to learn how to use weaponry, and sometimes, they learn how to use vehicles, like in H2.

In fact, in the pelican that crashes at the beginning of one of the HC levels, there's a blob over the control panel that used to be the pilot.

I do not think a single pelican made it through H3 without crashing. Even the Master Chief crashed one at the very end

I found it hilarious how at the end of H3 everyone's so used to pelicans crashing that nobody even blinks when that last crash happens-- they just jump out and don't even turn around
